Full Sail Holiday Beers

Full Sail Brewing is ready for this holiday season with three of its popular winter seasonals returning to store shelves and tap handles throughout its distribution footprint. The longstanding brewery in Hood River celebrates the season with Session Fest, Wreck the Halls, and Wassail.

Back in in 1988 Full Sail began its holiday tradition with its very popular Wassail. This annual winter seasonal is brewed with a range of caramel malts and dark chocolate malts giving it a deep mahogany color and a full malty body. Full Sail used a blend of European noble hops and Pacific Northwest aroma hops for a pleasantly hoppy finish creating a deliciously balanced beer that appeals to both hop and malt lovers alike. Wassail is available in 6-packs and on draft. ABV 7.2% IBU 56

Wreck the Halls is a sublime hybrid of an American style IPA and a winter warmer. The result is a bold brew that celebrates the holidays with an intriguing blend of Centennial hops providing elegant citrus notes balanced by a backdrop of a rich caramel malt body. Dry hopped to amplify the aromas and flavor. This four time gold medal winner is available in 22 ounce bottles and on draft. ABV 6.5% IBU 68

Session Fest is Full Sail’s Session holiday beer that comes in a stubby little bottle. It makes a great stocking stuffer and is the perfect beer to leave by the fireplace for Santa or Santa’s little helpers. Session Fest has a medium to full body that balances the candy caramel and full malt flavors. These flavors are underscored by a spicy hoppiness that provides a nice perfume with citrus and pine overtones and a long clean finish. Session Fest is available in 12-packs and on draft. 6.2% ABV 26 IBU.

Full Sail Cornerstone Imperial Coffee Stout

In addition to these festive offerings Full Sail has recently teamed up with Pacific Rim Coffee Roasters to craft Cornerstone Imperial Coffee Stout. This limited Pub only release is said to balance a bold coffee aroma with the subtle fruit character of its Imperial Stout. Complex notes of dark chocolate, cherry and vanilla are complimented nicely by roasted malts and warming alcohol. Gentle carbonation adds a soft mouthfeel and delivers a beautiful “creama” reminiscent of your favorite espresso. ABV 7.4%  IBU 58

December’s Full Sail Brewmaster Dinner is only one week away. This month’s theme is Northwest Winter Bounty and features four tasty courses paired with four of Full Sail’s award winning brews. Full Sail’s Brewmaster Dinners are held the second Thursday of each month (except for December which is the third Thursday) from October to April at its Brew Pub in Hood River. FIRST COURSE
Paired with Windy River Wheat
Grilled fennel, heirloom beets, Cascadia Creamery Sleeping Beauty cheese, arugula and farro with white balsamic vinaigrette.



SECOND COURSE
Paired with Session Black
Mt. Shadow marrow topped with chimichurri and Session crostini served with braised leeks.

THIRD COURSE
Paired with Wassail
Mt. Shadow Oxtail over pomme puree topped with root vegetable frit.

FOURTH COURSE
Paired with Imperial Cherry Stout
Povitica served with persimmon and raw honey ice cream topped with Wheatwine and quince sauce.
