Bid Farewell To Jackson Wyatt At N.W.I.P.A. Triple IPA Fest

Jackson Wyatt of N.W.I.P.A. delivers The Cream of the Crop when it comes to IPAs at his IPA beer bar in Fo-Po.

On Saturday, February 25th, N.W.I.P.A. will host its 4th annual Triple IPA Fest. The hop bombs will be pouring from 2:00pm until Midnight. This event however will see the departure of Jackson Wyatt from his everyday duties at N.W.I.P.A., as he will transition at the end of March to take a position at Grains of Wrath Brewing working for Mike Hunsaker.

N.W.I.P.A. opened 4-1/2 years ago from owners Dan Huish, Zoe Moskovitz and Wyatt. Since its inception Wyatt has been the face of the popular IPA-centric bar and brought a popular fall and winter weekly Burger Monday Night that will most likely come to an end. As Wyatt moves on from his “MC” duties, Huish along with Taylor Jensen will take over and become the faces of N.W.I.P.A.

This new opportunity for Wyatt sort of came up out of the blue. “I had no plans of leaving at the time. As you know, I am Michael Hunsaker’s number one fanboy,” states Wyatt. “Over the last two years my wife, Faby, and I have become very good friends with him and most the Fat Head’s crew. It is our third place. We have known for a while about Grains of Wrath but it had never really crossed our mines that we might work there. Then about two months ago Mike asked Faby to be the chef. Somewhere along the way Mike proposed that I join the team. I didn’t think much of it at first but the more I contemplated, the better it sounded!”

So when Grains of Wrath tentatively opens later this year after a building renovation in downtown Camas, Washington, Wyatt will see most of his time in the kitchen assisting his wife. But his goal is to learn more about brewing and gain some apprentice time with both Hunsaker and his assistant brewer, Owen Lamb.

I will be in the kitchen to start, helping Faby. As far as the menu goes, that is her baby, but basically just really good food executed well,” states Wyatt. “I can tell you that it will have a vegetable focused section for sure. There will be a burger that I will spearhead. It will be in the same vein as our Burger Mondays but probably not sous vided. Perhaps we can run that as a special sometime.”

As for working in the brewery, that will probably in the distant future. I have zero experience in that realm other than drinking. It will definitely be an apprentice type situation. I plan to help in all facets of the business where I may be needed from kitchen to brewery to hype man to event coordinating to bar backing.”

Well before Wyatt departs from his day-to-day operations at N.W.I.P.A. come say goodbye one last time during Saturday’s Triple IPA Fest. Though we suspect he will still be lingering around the bar during his downtime.
