Gigantic & Ecliptic Collabo TicWitTic

The latest in releases from the boys at Gigantic Brewing is a new collabo with the building in progress Ecliptic Brewing. Just as Gigantic’s Ben Love and Van Havig went from brewery to brewery to brew what they termed collabo’s prior to their brewery opening, they are now returning the favor by opening their brew kettle to legendary brewer John Harris for his soon to be opened brewery and pub in Northeast Portland. As we mentioned here a few months back, Ecliptic Brewing hopes to have its doors open this fall.

 

So which style of beer did Gigantic and Ecliptic collabo on? Well they came together to brew a Sour Belgian Wit which they are calling TicWitTic. The clever name is a play on each of the breweries names. Harris came up with the name by combining GiganTIC and his brewery’s name EclipTIC to get TicWitTic.

 

TicWitTic started as a very traditional Belgian-style Wit with a mash of pilsner malt, flaked wheat and oats. They then kettle soured it for two days with lactobacills – which lowered the pH to 3.55 and provided an incredibly clean sourness. It was then briefly boiled and added Willamette and Crystal hops, and the traditional Wit ingredients: Curacao orange peel, sweet orange peel, coriander, and chamomile flowers. Finally it was fermented with the Forbidden Fruit Belgian yeast strain. The final beer is beguilingly cloudy, has citrusy aroma and extremely refreshing, drinkable sour finish. At 3.9% ABV its perfect for whiling the days away at the pub.

 

The TicWitTic release is going to be on Monday August 26th at Baileys Taproom and The BeerMongers. First John, Van and Ben will be at Baileys from 4:30pm – 6:30pm, and then they will ride our bikes over to The BeerMongers for stop 2 from 7:00pm – 9:00pm.
