The Noble Fox To Take Over the Former Standing Stone Brewing

A year and a half ago, Standing Stone Brewing closed its doors in Ashland, Oregon. Come next year, the former location will be home to the forthcoming The Noble Fox Restaurant & Brewery.

Co-owners, Jeramie Mykisen and Jeffrey Tinkham, currently own and operate a restaurant, The Noble Fox, in Silverton, Oregon. The two recently acquired the entire building that was once home to Standing Stone Brewing since its inception in 1997 and until it closed over Memorial Day Weekend in 2022.

Well that void of a brewery in downtown Ashland will hopefully come to an end when The Noble Fox Restaurant & Brewery opens in Spring 2024. Once open, it will re-introduce this 10-barrel brewery and 200 seat restaurant to scenic downtown Ashland, The Noble Fox will also bring a new whiskey bar to the establishment as well as a retail shop.

The Noble Fox Restaurant & Brewery will be led by Mykisen. He will bring his 21-years of experience as the previous beverage director at McMenamins Pubs & Breweries in Portland, Oregon to The Noble Fox. Mykisen  has also authored of the acclaimed recipe book, Quintessential Cocktails, and will bring his expertise to this new venture.

Its food menu will include upscale bar food, known for its Noble Burger, and will include vegan and gluten free food options. The Noble Fox will continue to source local ingredients to offer a menu that will satisfy most appetites.

To help get this new location moving forward, The Noble Fox is attempting to raise much needed capital via SMBX Small Business Bonds. The goal is to raise $300K, as of this publishing just shy of $12K has been raised. These bonds start at $10 and you’ll earn 11% interest monthly over 5 years. A decent rate of return if the business succeeds.

Recently The Noble Fox in Silverton received a few accolades in the 2023 Best of the Willamette Valley. These awards include Best Silverton Restaurant (Gold), Best Outdoor Dining (Gold), and Best Happy Hour (Silver).
