I had the opportunity to taste the Cherry Adam From the Wood today and I found it to be an extremely complex vinous and robust beer. Nearly black in body with hints of chestnut and amber, the Cherry Adam employs whole unpitted cherries to give it a flavor profile ranging from tart to sweet and chewy. A deep malt spine is a predominant characteristic of this magnificent beer. Dark fruity esters ruminate in this slick-bodied brew. The finish is currently of a dry silkiness. Dry tannins linger and in a few years, after proper cellaring, the bold artisan flavor should be aged to perfection* and worth waiting for.
I am hoping to try some of this when I am up that way next month. I just tried the Raven Mad from Bridgeport which is also aged in barrels. You Oregonians sure know how to make some good beer 🙂
